Opens the Restaurant il Giardinaccio, a bet of my parents, authentic pioneers in a San Teodoro almost impossible to tell. I like to remember the history of my restaurant because, even if latest and fashions have their own reasons, the past always tells who you really are.
Becoming an adult I realized that I was an atypical child because I always played with corks and cutlery, and no one has ever asked me: so, what will you grow up to be?
There was no need, everyone had already understood my fate.
Our kitchen? Certainly direct and sincere, like my chef Maurizio Aldrovandi. With him in the kitchen is the rule of the “MTR”: raw Material, Technique, Recipe, and for all the rest? All the rest follows from this….
